Siphon brewing survived a century because nothing else tastes quite like it. The Kivu makes it shift-proof — even heat, balanced stands, tools where hands expect them — so the ritual earns its place on a working bar.
Brew paths are food-grade stainless and borosilicate — no plastics where hot water lingers. Elements are PID-held to the half degree, spray heads pulse rather than pour, and every wetted part disassembles for cleaning without tools, because a brewer you cannot clean is a brewer you will not trust.

Care
Rinse wetted parts daily and run a brewer cleaning cycle weekly with coffee-safe detergent. Descaling is rarely needed on treated water — pair the brewer with proper filtration and the boiler stays honest for years.

What sizes of batch does it make sense for?
Each listing states its happy range. As a rule: batch brewers below half capacity get bitter-fast turnover instead of stale carafes — size to your slowest hour, not your busiest.
Can it run on untreated mains water?
It can, briefly, like anything can. Pair it with proper filtration — boiler warranties assume treated water, and the cup assumes even more.
