Cold is a craft of margins: compressors sized with headroom, food-safe stainless interiors with coved corners, doors that seal with a thunk and hinges that outlive the lease. Temperature holds within a degree of setpoint at bar-room heat, and the noise figure is written on the spec sheet, not discovered at 7 a.m.
