Batch brew is a café's quiet margin — when it is good. The Ponente keeps it good at volume: logged batches, hold timers with opinions, and cleaning cycles that get run because they are easy.
Precision here is unglamorous: thermistors that read true, flow meters that meter, and firmware that repeats a recipe to the gram and the second, shift after shift. The panels are steel, the carafes are vacuum or borosilicate, and the numbers on the display are the numbers in the cup.

Care
Rinse wetted parts daily and run a brewer cleaning cycle weekly with coffee-safe detergent. Descaling is rarely needed on treated water — pair the brewer with proper filtration and the boiler stays honest for years.

How repeatable is it really?
Recipes are stored to the gram, degree and second, and the machine logs each batch. Two brewers running the same recipe in two cities is the point of the product.
Can it run on untreated mains water?
It can, briefly, like anything can. Pair it with proper filtration — boiler warranties assume treated water, and the cup assumes even more.
